Savory pies are one of our favorite comfort foods! We started making Chicken Pot Pies for the farmer's market and people just went crazy for them. We make our own delicious chicken stock to use in the thyme cream sauce that coats the chicken and carrots. Then that mixture goes into the crust and gets topped with another crust. It bakes up into a golden, delicious pie and the sauce thickens slightly so that when you cut into it you are not left with a saucy mess.
Now we are working on a Shepard's Pie. Depending on where you or your ancestors come from Shepard's Pie can mean many things. Growing up we ate a somewhat Americanized version of Shepard's Pie- ground beef cooked with sauteed onions and corn then topped with mashed potatoes and baked in the oven. We decided to pay tribute to this comforting meal by dailing up the flavor! We've added fresh herbs to the meat mixture along with other seasonings to create a rich and delicious filling. Then we mix in corn AND peas (because every meal needs vegetables!). We put all of that in a pie crust and top it with creamy, garlicky mashed potatoes. See slide show below!
Pie Shop Update: Today we got word that the Health Department signed off on the architectural plans! Now they get passed to the Building Inspector. In the meantime we have been meeting with contractors and testing out new pie recipes.
