This past week we put our crowbar to good use and pulled up all the carpeting in the building! Even though no walls have come down the space seems larger now! It's so much fun to envision what it will look like as a pie shop. There are large windows in the front of the building which will allow for a lot of natural light to come through to the seating area. We have heard from our architect that they are targeting the first week in March to get all of the drawings in, yay! In the mean time we are still recipe testing, including these coconut jam thumbprint cookies which are a family favorite. We want to offer a few other non-pie sweets like cookies, muffins and sweet breads.
We hope everyone had a wonderful holiday! We are approaching the finish line as far as having architectural plans and getting our permits from the town. As they say good things come to those who wait (but who likes to wait?!). Since our building was previously an office space there are a lot of considerations when transforming the space into a food retail location like the septic system. We will be adding onto our current system so we can have more more tables and seats available for those customers that would like to have coffee and pie at the pie shop.
