Here are answers to some of our most frequently asked questions!
1. What are your hours?
Sorry for any confusion when it comes to store hours! Our hours are as follows:
Tuesday -Friday 10am to 6pm
Saturday- 10am to 3pm
Sunday and Monday- Closed
(There was a time period when we were closed on Tuesdays but we are not anymore)
2. What is a Lemon Chess Pie?
This is a popular Southern pie that tastes like a lemon bar. We make a lemon filling with fresh lemon zest and juice, eggs, milk, a little flour and cornmeal to thicken it up and then bake it in the oven. The top gets a little crunchy then we dust the top with powdered sugar. You can read about some of the history of Chess Pie here: https://whatscookingamerica.net/History/PieHistory/ChessPie.htm There are many different stories about how this pie got it's name!
3. What is in the Chicken Pot Pie?
Diced chicken, carrots, onions, celery, fresh thyme in a double pie crust.
4. When are you going to have (fill in the blank) pie?
There are so many possibilities when it comes to pie! We are slowly testing new recipes as we want to get them right before we put them in the case. Our goal is to have traditional pies available as well as some non-traditional pies (like Chocolate Coconut Almond Pie- coming soon!) We also want to offer a variety of savory pot pies. All pies are made from scratch including the pot pies. We make all stocks and sauces from scratch as well. We post on social media whenever we have a new pie and when it will be available.
5. Can I place an order for (fill in the blank) pie?
We only take orders for pies that we currently make. We also ask for at least 24 hours notice when placing an order (but occasionally if you call for a pie and pay over the phone we can hold it for you!)
6. How come you don't answer your phone sometimes?
We are a small team and occasionally there are time periods when we are helping customers in the store or in the middle of making the chocolate cream filling and we just can't walk away! You can try to call back in a few minutes or just stop by the store!

We are so delighted that everyone has stopped by to check out the shop and buy a pie (or multiple pies!). We never could have imagined being this busy so soon. We have also discovered that you really like the Chicken Pot Pie! In an effort to keep up with demand for ALL the pies we have decided to close temporarily on Tuesdays.
By closing on Tuesdays we will be able to stock the freezers with Chicken Pot Pies for you to purchase frozen or hot. As some of you may know we have been closing early because we are sold out of pies. We really want to be open until 6pm for customers who work until 5pm to be able to stop on their way home from work.
Another reason for closing on Tuesdays is so we can develop new pie flavors for you. We have so many recipes that we want to test out and get into the display case- Blueberry, Brownie Pie, Mixed Berry, Lemon Meringue, S'mores and much more. Also we want to add some other savory options like Shepard's Pie, Chorizo and Rice Pie, Beef Pot Pie and a vegetarian pie (we really like the Chickpea Curry version we developed!).
To the customers who have tried to stop by when we have sold out we thank you so much for your patience with us as we learn the ins and outs of running a pie shop. We hope to see you soon!
New Store Hours:

We opened yesterday for family and friends and any customers that drove by and saw the lights were on! It was a great day. We sold out of pies and learned that we need to keep a lot of pies on hand. We are still learning and getting our systems down. Thank you to everyone that came out to try the pie and coffee!
Pie Shop Hours: Tues.- Fri. 10am to 6pm and Sat. 10am to 3pm.
Happy New Years! We hope you had a wonderful holiday season! So much progress has been made at the pie shop it's hard to know where to start. We have all of our kitchen equipment in the shop! Now the place is really starting to look like a pie shop. We also have countertops up and a bar seating area. The fun part for me is thinking about the design. We really want the space to be open and welcoming to customers.
We have also learned to appreciate the small things, like recessed lighting! So amazing to walk in and be able to turn on lights in the front area. It was also exciting to see water coming out of the sink faucets. All the little things add up to create an amazing space where delicious pies will be made.
We are approaching the finish line and will post more once we have confirmed opening dates. Thank you all for your support during this journey, can't wait to meet you and serve you some pie!
December has brought A LOT of changes to the renovation project and we are only 6 days into the jolliest month of the year! Improvements include:
We have also been testing a Peanut Butter pie....it's sooooo delicious. The filling is similar to peanut butter fudge then it's topped with a smooth chocolate ganache aka chocolate glaze. And it's in a chocolate cookie crumb crust!
Next stop: Painting!
I love Thanksgiving so much especially all the delicious FOOD (and all the pies)! But unfortunately Flaky Crust Pies will not be open for Thanksgiving this year. Typically pie shops start taking Thanksgiving orders Nov. 1st and because we are still under construction we are not able to take any orders for Thanksgiving. While we say this with a heavy heart we know that Thanksgiving 2019 will be amazing! There will be plenty of preparation and time to get all the systems down. Plus you will get to taste all the pies BEFORE Thanksgiving so you can really find your favorite.
On another note, since we will be opening in the cold winter months, when all you really want is comfort food, we have been testing out A LOT of different savory pies. Including a Thanksgiving Dinner pie with stuffing, fresh roasted turkey, made from scratch gravy and cranberry sauce made with real, whole cranberries! It's kind of like a Gobbler/Thanksgiving sandwich in pie form. Some other savory pies in the works: chorizo and rice, curried vegetables and chickpeas (vegetarian!) and a beef pot pie. At the pie shop there will be a warmer with hot pies ready to go, so right when you get home you can enjoy your pie. Or if you want to stock up for those winter storms there will also be a freezer full of (unbaked) savory pies.
Our subcontractors have been working very hard on new HVAC systems and plumbing! Once inspected they will cover up the pipes and the electrician can start. In the pictures below you can see where they actually cut into the foundation in order to lay the new pipes. We added a sign by the street to get everyone even more excited for the pie shop!
The contractors have started demolition inside the pie shop! Walls have come down, ceilings have been torn out and the old bathrooms are gone! Now it's time to rebuild. We are crossing our fingers to be open in a few months but this will depend on how the construction process goes. More updates to come!
We broke ground (literally!) The first steps were made in repairing/expanding the septic system of the pie shop. By doing this repair we will be able to offer more seating to customers that want to enjoy their pie and coffee in the shop. We are also adding 2 brand new handicapped accessible bathrooms to the pie shop! Our goal is to create a warm, comfortable and inviting space to for everyone to celebrate pie. We know septic systems and bathrooms aren't all that exciting but it's all part of the transformation! We leave you with a snapshot of our Caramel Apple Crumble, this was very popular at the farmer's markets! Our traditional apple filling gets topped with a buttery oat crumble. Once it's out of the oven it gets a drizzle of homemade caramel...so delish!
